Anti-Aging Powerhouse

While my love for wine is well known, my love for the alternate evolution of the grape- the Raisin, is just as important for my skin! The Raisin has more than twice the amount of antioxidants than fresh grapes.  Anti-aging antioxidants are a powerful benefit and appeal of the raisin as not only does it keep your skin young and protected from UV damage, but it also encourages hair growth, and prevention of early grey hair accumulation. Though this small purple, red and golden treat is also found to have more sugar that grapes they raise a great defense against tooth decay and cavities. With vitamins A, B, and E present this small fruit can have a powerful impact in keeping your vision sharp, skin glowing and our iron levels in check, preventing anemia. Living in an age where energy drinks and coffee reign supreme a great natural energy boost can be found here. Never underestimate the raisin because it truly can work wonders for us! I found a recipe that pairs with other great heathy foods to make a delicious meal!

Mediterranean Halibut with Golden Raisins

Ingredients:

1 pint of cherry tomatoes (whole or half)

¼ cup of Kalamata olives (pitted)

½ cup of golden raisins

¼ cup of olive oil

1 large lemon (juice and zest)

1 Tbsp. sherry vinegar

4 center-cut halibut fillets (6-8oz each)

Salt and Pepper (to taste)

Directions:

  1. Toss the tomatoes, olives, raisins, olive oil, sherry vinegar and lemon juice and zest together.
  2. Roast the mixture at 400°F until the tomatoes burst (20-25 minutes)
  3. Sear the fish on a hot pan until both sides are golden
  4. Pour the mixture over the fish, add salt and pepper to taste, and serve
