What’s for Breakfast?

Breakfast is the most important meal of the day, but why? Breakfast is our body’s roadmap for the rest of the day influencing our physical and mental performance. It fuels our bodies in the morning to tackle the day, reduces the stress hormones and improves the absorption of all other food throughout the day. To start the day right, a great breakfast you can have is one with healthy ingredients and is also easy to make and is not only tasty but is also gluten free. Try this Ham and Cheese Quinoa Cup Recipe!

Ingredients:

2 cups cooked quinoa (3/4 cup uncooked quinoa

2 whole eggs

2 egg whites

1 cup shredded zucchini

1 cup shredded Sharp cheddar cheese

½ cup diced ham

¼ cup loosely packed parsley chopped

2 tablespoons shredded or grated parmesan cheese

2 green onions, chopped

Salt & pepper

Directions:

Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix. Liberally spray a mini muffin tin with non-stick spray and spoon mixture to the top of each cup. Bake for 15-20 minutes, or until the edges of the cups are golden brown.  Let cool for at least 5 minutes before removing from the mini muffin tin.

For regular-sized muffin tins: Bake for 25-30 minutes
